Good Eats: Chicken, Veggies & Sweet Potato


I’m down for easy recipes that require little ingredients and even less dishes! This recipe meets all of the above and it’s delicious! The other great thing about it is that you can mix it up all week so that even though you are eating the same thing – you won’t feel like you are! I like to include a little side of hummus to dip into.

Chicken, Veggies and Sweet Potato


What You’ll Need

  • 4 Chicken Breasts, cut up into pieces

  • 3 Sweet Potatoes, peeled and diced

  • 4 cups of broccoli (or other veggie(s) of choice)

  • 1/2 cup chopped bell peppers

  • Seasonings of choice (try taco seasoning, chipotle, bbq, etc…)

  • Salt and pepper to taste

  • 2 tablespoons of hummus (optional)

How to:

  • Preheat over to 400

  • Toss your chicken pieces in seasonings of choice and a bit of olive oil

  • Arrange evenly on a baking sheet

  • Arrange your veggies on another baking sheet with olive oil and sprinkle salt/pepper/seasoning

  • Bake for 20 minutes, until cooked through

  • Remove chicken and veggies

  • Sweet potatoes may need another 10 minutes (based on preference)

  • Divide your serving into portions and eat a good lunch for the week!

Some ways to change it up throughout the week:

  • Serve the chicken and sweet potatoes with rice one day instead of veggies

  • Toss the chicken pieces on a salad for lunch (use your sweet potatoes and veggies as part of your dinner)

  • Serving the meatballs over a salad
