Feed Me: Banana Pancakes

If you’ve been following all month, I’ve armed you with easy recipes, tricks to get veggies in and simple nutrition habits to focus on. Are you feeling battle ready?!


Well, I’ve got another recipe and it helps you tackle breakfast while keeping it nutritious!


It's a bonus recipe for Banana Pancakes (hint: I don’t just make these for breakfast!). Since they don’t contain flour, they come out more like crepes than pancakes but you get the drift!


Use this recipe and…

  • Eat them as-is

  • Smother them in sliced strawberries, peaches, or blueberries

  • Add a tiny bit of maple syrup or honey

  • Roll up with some ricotta and fruit inside

  • Add some vanilla and cinnamon to the batter

  • …use your imagination!


Banana Pancakes

(makes 1 serving)

  • 1 medium ripe banana

  • 2 eggs

Place the banana and eggs in a blender and puree until smooth.


Add a small amount of oil to a nonstick skillet and heat over medium heat. Add ¼ cup of batter into the pan and cook until bubbles start to appear on the top of the pancake and the edges look cooked (about 3-4 minutes).


Flip and cook on the other side for about 1-2 minutes, until browned on the bottom. Remove from the pan and place on a plate. Repeat with the remaining batter.
