I completely understand how hard it can feel to get a healthy meal on the table on weeknights where you barely have time to sit down! Life’s a whirlwind sometimes, but it’s worth the extra bit of effort to put a meal together that won’t leave you feeling heavy and bloated! That’s why I love one pot dishes I can make in record time – with little mess to clean up. This Taco Skillet is a favourite of mine and using lean ground turkey makes it healthy without losing any flavour.
Turkey Taco Skillet
Ingredients
1 lb. lean ground turkey
1 pkg. taco seasoning
2¼ cups water
1 (16-oz) jar salsa (use a homemade version or choose one with fresh ingredients)
1 (11-oz) can corn
Chopped red & green bell peppers
2 cups brown rice
toppings, such as shredded cheese, cilantro, green onions, sour cream, tomato and lettuce
Instructions
Cook turkey in a skillet until brown (break it up into pieces)
Stir in seasoning mix, water, salsa and corn. Bring to a boil.
Stir in rice. Simmer on medium for 5 minutes.
Cover with tight-fitting lid, and turn off heat (keep pot on burner).
Let stand 15-20 minutes, until liquid is absorbed and rice is tender.
Dish up into bowls and top with favorite toppings. Enjoy!
