If you're looking for an easy, no fuss recipe that will give you a versatile protein base to work your meals around all week then you have to try my go-to shredded chicken! This cooks itself in the slow cooker and you can spice it up anyway you want it to use in meals all week long.
I will switch between leaving the chicken plain so it can used with a lot of different flavours throughout the week or I'll spice it up differently each time so I don't get bored. Once the chicken is cooked and shredded, I add it to pretty much whatever I feel like. I use it a lot in my salads, stir fry's, rice and veggies mixtures as well as tacos or wraps. The list is endless on what you can use this chicken for. It makes for an easy week of meals that you barely have to think of - just make up the chicken on a lazy Sunday and divide it up for the week so it is grab and go ready!

My daughter - the pickiest eater around - loves when I have this on hand so she can decide on her own meals around the chicken.
Slow Cooker Shredded Chicken
You'll Need
4 Chicken Breasts (Or more depending on how much you want and how much your slow cooker can hold)
2 Cups of Chicken or Vegetable Broth / Stock
Salt and Pepper
Optional: spices like taco seasoning, bbq, spicy, garlic, etc....
How To
Place the chicken breasts in your slow cooker
Add in spices of choices, if any
Pour in broth /stock
Cook 8 hours on low
Once cooked, you will be able to shred the chicken with two forks easily
Place in air tight containers in the fridge
