This is a go-to recipe for me when it comes to meal prepping some lunches for the week. It's easy, versatile and doesn't break the bank!
What You'll Need (makes 4 portions):
2 Chicken Breasts
Rice of choice (3/4 cup uncooked)
Veggies of choice (onions, peppers, etc...)
How To:
Season your chicken breasts with taco seasoning (or use a combo of chili powder, paprika, salt and pepper)
Bake your chicken breasts at 350 for 30-40 minutes - chop up when done
While the chicken is baking chop all your veggies and cook your rice
Divide into portions so that each container has chicken, rice and veggies
Re-heat each portion before eating - Enjoy!
