Good Eats: Chicken Fajita Bowl (Meal Prep Style!)


This is a go-to recipe for me when it comes to meal prepping some lunches for the week. It's easy, versatile and doesn't break the bank!

What You'll Need (makes 4 portions):

  • 2 Chicken Breasts

  • Rice of choice (3/4 cup uncooked)

  • Veggies of choice (onions, peppers, etc...)

How To:
  1. Season your chicken breasts with taco seasoning (or use a combo of chili powder, paprika, salt and pepper)

  2. Bake your chicken breasts at 350 for 30-40 minutes - chop up when done

  3. While the chicken is baking chop all your veggies and cook your rice

  4. Divide into portions so that each container has chicken, rice and veggies

  5. Re-heat each portion before eating - Enjoy!
