I love salads but every once and awhile I need to change it up and make it a bit more hearty. This is a quick and easy way to bulk a salad -- plus it includes bacon so...enough said!
Chicken Cobb Salad
What You’ll Need
6 cups chopped romaine lettuce (or spinach)
2 cups sliced or shredded cooked chicken breast
2 chopped boiled eggs
½ cup shredded cheddar cheese
1 to 2 cup diced small tomatoes
½ cup crumbled bacon (about 4-5 bacon strips)
choice of salad dressing
How to:
As simple as combining all ingredients in a bowl and adding the dressing of your choice! ( I like to use an oil based dressing to keep it on the light side).
