Good Eats: Turkey Burgers (or Meatballs)

If you've been following for awhile, you've probably noticed that I enjoy recipes that are not so strict on the rules or ingredients! I like simple and flavourful and my best recipes include a lot of flexibility on how I season them and incorporate them into my meals! (It's gotta be quick and easy to make, healthy for me and not boring!).

This is a recipe that I use often in my meal prep! It's so easy to change up the flavour depending on my mood and I can even change the way I use it - I make this as patties that I eat on a bun or without or I make it as meatballs and change up my lunch everyday!

Turkey Burgers (or Meatballs!)

What You’ll Need

  • 1 package of lean ground turkey

  • 2 handfuls of chopped spinach

  • 1/2 cup of chopped red onion

  • 1/2 cup chopped bell peppers

  • (other chopped veggies of choice - carrots, celery, broccoli)

  • 1 tablespoon of feta (or other type of cheese)

  • 1 large egg

How to:

  • Preheat over to 350

  • Combine all ingredients in a bowl and mix well

  • Form the mixture into burger patties or form into meatballs

  • Place on a baking sheet

  • Cook for 30 - 45 minutes, until cooked through

  • Enjoy as a burger with toppings of choice and a side salad

  • Or enjoy as meatballs over rice, salad, etc....

  • Get creative!

Some ways I have used this for my meals include: - Serving the meatballs over rice - Serving the meatballs over zucchini noodles - Serving the meatballs over a salad - Having the patties on a bun with salad or potato side - Having a patty without a bun over a salad or with rice
