Good Eats: Philly Cheese Steak Zucchini Boats



I love recipes that take something I love and add healthy twists. I'm down for anything Philly Cheese Steak related and this recipe is perfect since it combines Philly Cheese Steak elements and health!

Philly Cheese Steak Zucchini Boats

What You’ll Need

  • 4 medium/large zucchinis

  • 1 diced onion

  • Mushrooms (6 oz), sliced

  • 1 red pepper, chopped

  • 1 green bell pepper , chopped

  • 3/4 lb sliced thin deli roast beef , chopped into small pieces

  • Salt and freshly ground black pepper

  • 1 1/2 Tbsp water or beef broth

  • 1 1/4 cups shredded provolone cheese

How to:

  • Preheat over to 400

  • Remove the centres from zucchini to create boats by scooping it out

  • Brush zucchinis with olive oil - season with salt if desired

  • Place them on baking pans and bake in preheated oven 20 - 25 minutes

  • Heat a skillet - saute onions, mushrooms and bell peppers with salt, pepper and garlic (and/or other seasonings of choice)

  • Add in roast beef, season with salt and pepper to taste then stir in water and cook until warmed, about 30 seconds

  • Fill the roasted zucchinis with the roast beef mixture.

  • Add some cheese on top and return to oven to melt the cheese if preferred

Ways to change it up:

  • Grill them on the BBQ instead of baking in the oven!

  • I'll do the same thing in this recipe with bell peppers instead - stuff them with the same ingredients

  • Instead of deli meat - use shredded chicken, ground beef or ground turkey

  • Serve with various side dishes: potatoes, rice, salad, roasted veggies, etc...
