Good Eats: BBQ Chicken Salad

No more #sadsalads ! Level up your salad game with this awesome and flavourful salad.

What You'll Need:

  • 2 boneless skinless chicken breasts

  • 2 teaspoons olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 tablespoons bbq sauce

  • 1 tablespoon of ranch dressing

  • 6 cups chopped lettuce

  • 1 cup cherry tomatoes — halved

  • 1 cup canned low-sodium black beans — rinsed and drained

  • 1/2 cup canned corn— drained

  • 1/4 cup diced red onion

  • Tortilla chips- crushed

How To:
  1. Brush chicken breasts with bbq sauce

  2. Cook chicken breasts in a pan - until the chicken is cooked through, chop it up

  3. In a large bow, mix lettuce, tomatoes, beans, corn, red onion, and chopped chicken.

  4. Drizzle the salad with ranch dressing, then toss to lightly coat.

  5. Top with crushed tortilla chips
