What You'll Need:
2 boneless skinless chicken breasts
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons bbq sauce
1 tablespoon of ranch dressing
6 cups chopped lettuce
1 cup cherry tomatoes — halved
1 cup canned low-sodium black beans — rinsed and drained
1/2 cup canned corn— drained
1/4 cup diced red onion
Tortilla chips- crushed
How To:
Brush chicken breasts with bbq sauce
Cook chicken breasts in a pan - until the chicken is cooked through, chop it up
In a large bow, mix lettuce, tomatoes, beans, corn, red onion, and chopped chicken.
Drizzle the salad with ranch dressing, then toss to lightly coat.
Top with crushed tortilla chips
